Easy non-meatballs
One of our favourite dishes is meatballs, especially my moms Swedish meatballs – but since we try to eat mainly plant-based, we needed a quick and easy recipe on meatballs without the meat. This recipe based on black beans is so good and easy to make, and they even look like “real ones”.
Spice them up with different herbs or change the type of cheese to transform the balls into different styles of cuisines. We made these with mozzarella, oregano and basil and served them together with spaghetti and a tomato sauce, but you could for example make them with cheddar cheese and serve them with potatoes and lingonberry jam. Or put coriander in them and make an asian style version with noodles? The recipe is a great neutral base to work with!
What you need to make the bean ball base:
4 persons
Approx. 30 min.
1 can of black beans (400 gram)
2 dl quinoa flour (you can also use almond flour)
2 dl grated cheese (mozzarella/cheddar or any other cheese you’d like)
1 dl bread crumbs
1 grated yellow onion
1 egg
salt /pepper (spice them well)
If you want, add f.ex. basil, oregano, coriander, cayenne pepper or any other herb/spice to make them extra flavourful.
Mush the black beans first and then mix in the other ingredients – add a little water if it’s too dry, it’s ok if they are a little bit sticky when you roll them. They should look like the one in the picture when you have rolled them. Time to fry! They should have a nice brown crust when they are done.
Yesterday, we made them italian style and today we used the left over balls in a red rice bowl with grilled veggies, cayenne chickpeas and guacamole – Yum!
