A couple of days ago, I won an Instagram giveaway that the lovely Luise from Green Kitchen stories held together with the Finnish brand Lillagunga and yesterday I picked the package up at the postoffice! It contained the Green Kitchen smoothie book and a pair of gymnastics rings – you can imagine Felix’s joy when he came home to find them – I’ve promised that they will be up this weekend and he’s so exited to be swinging in his room. I might need to get him a kind of a mattress underneath though, so he won’t hurt himself, he’s a wild child:)

I was so happy to find out that I’d won the giveaway, we have the previous two Green Kitchen cookbooks already (Green Kitchen stories and Green Kitchen travels, recommend them!) and we use them all the time to make vegetarian and vegan food! Apparently they also have a third cookbook coming, will definitely have to get it as well.

We cook vegetarian food most of the days at home and yesterday I made some potato/chickpea steaks for dinner, super easy and Felix loved them too!


Potato/chickpea steaks, approx. 15 steaks

500 grams potatoes

2 cans (800 grams) of chickpeas

1 egg (if you don’t want to use egg, you might be able to use the aquafaba – liquid from the chickpea jar – as a substitute)

A handful of coriander

salt/pepper

1 small onion, finely chopped

2 cloves garlic, grated

2 teaspoons of cumin powder (use more/less depending on how much you like cumin)

Chop the potatoes in smaller pieces and boil in salted water. When boiled, mash the potatoes together with the chickpeas, add in the other ingredients and make small steaks – fry on a pan for a couple of minutes until they’re golden brown. Serve with a salad and some yoghurt sauce!
